Jej\u00ed dne\u0161n\u00ed podoba m\u00e1 proto sice klasickou balk\u00e1nskou p\u0159\u00edchu\u0165, je v\u0161ak ovlivn\u011bna i kuchyn\u00ed tureckou, \u0159eckou, perskou a indickou.<\/p>\n\n\n\n<p>Typicky si zde pochutn\u00e1te na ml\u00e9\u010dn\u00fdch v\u00fdrobc\u00edch, jako je jogurt \u010di s\u00fdr, v\u00edn\u011b a p\u0159edev\u0161\u00edm mase na grilu. Jeho obdobou je pak past\u00fd\u0159sk\u00fd sal\u00e1t, kam se nav\u00edc p\u0159id\u00e1vaj\u00ed houby, vejce, olivy, \u0161unka a tvrd\u00fd s\u00fdr (ka\u0161kaval). Komu syrov\u00e9 sal\u00e1ty tolik nevon\u00ed, m\u016f\u017ee vyzkou\u0161et nakl\u00e1danou zeleninu tur\u0161ija nebo sal\u00e1t z pe\u010den\u00fdch paprik katak.<\/p>\n\n\n\n<p>Kdo miluje pol\u00e9vkovou kulturu, v Bulharsku si p\u0159ijde na sv\u00e9. Velmi slavn\u00e1 je pol\u00e9vka z jehn\u011b\u010d\u00edch, vep\u0159ov\u00fdch nebo hov\u011bz\u00edch \u017ealudk\u016f s ml\u00e9kem a paprikou \u0161kembe \u010dorba, pochutn\u00e1te si i na pol\u00e9vce bob \u010dorba, jej\u00edm\u017e z\u00e1kladem je zelenina a b\u00edl\u00e9 fazole. Bulha\u0159i se d\u00edky d\u0159ev\u011bn\u00e9mu uhl\u00ed, kter\u00e9 masu dod\u00e1v\u00e1 jedine\u010dnou chu\u0165, t\u011b\u0161\u00ed magick\u00e9 schopnosti ugrilovat v\u0161e k naprost\u00e9 dokonalosti.<\/p>\n\n\n\n<p>Naprost\u00fdm unik\u00e1tem je grilovan\u00e9 vep\u0159ov\u00e9 ucho, je\u017e se nej\u010dast\u011bji j\u00ed jako p\u0159edkrm. Ucho se pe\u010dliv\u011b o\u010dist\u00ed, marinuje a n\u00e1sledn\u011b griluje dozaltova na otev\u0159en\u00e9m grilu. Vyzkou\u0161et m\u016f\u017eete nap\u0159\u00edklad zape\u010den\u00e9 l\u00edstkov\u00e9 t\u011bsto prolo\u017een\u00e9 masem \u010di s\u00fdrem burek nebo tradi\u010dn\u00ed pokrm banica. Milovn\u00edky \u010dokol\u00e1dy pak pot\u011b\u0161\u00ed obl\u00edben\u00fd \u010dokol\u00e1dov\u00fd dort gara\u0161.
